The Regismont estate, a cherished family-owned property spanning four generations, is situated on the border of the villages of Poilhès and Nissan les Ensérune, adjacent to the Via Domitia. Here, Bernard Paillet, the current proprietor and a part of a lineage of winegrowers, tends to organically grown grapes. He received training in viticulture and oenology in Carcassonne and Montpellier, amassing substantial experience and garnering recognition for his technical expertise in sustainable and organic grape cultivation.
